Lentil Dressing ~ Zing up your greens!

Bored of the same old salads? Be bored no more with this tasty salad dressing packed with protein! This one is from Brendan Brazier’s ‘Thrive Foods’ ~ I swapped the mustard for a pinch of chilli flakes, used red lentils and rapeseed oil rather than olive oil.

Lentil Dressing

2/3 cup cooked green lentils

6 tablespoons of olive oil

2 teaspoons miso paste

2 teaspoon of dijon mustard

4 teaspoons balsamic vinegar

Freshly cracked blacked pepper

Use a blender or food processor to blend the lentils, oil, miso, mustard and vinegar into a semi smooth mixture. Add pepper to taste.
